Cookie dough freezes beautifully, and honestly it’s my favourite trick: portion the dough into balls, freeze them solid on a tray, then tip into a bag. Bake straight from frozen — no thawing — adding a minute or two to the time. You get a fresh, warm cookie whenever you fancy one, and because the dough goes in cold, it holds its shape and bakes up tall. They keep well for about three months.
